Ingredients:eggplant - 1
tamarind paste - 1/2 tbsp
mustard seeds - 1/2 tsp
urad dal - 1/2 tsp
cumin seeds - 1/4 tsp
channa dal - 1/2 tsp
red chillies - 2
salt - to taste
curry leaves - few
coriander leaves - few
asafoetida - a pinch
oil - 1 tsp
water - 1/2 cup
Method:
1. Oil the eggplant and broil them till its fully cooked.
2. Let it cool, peel the skin, mash it well.
3. Dilute the tamarind paste with water.
4. In a pan, heat oil, splutter mustard seeds, channa dal, urad dal, cumin seeds, red chillies, curry leaves, asafoedita.
5. Add tamarind water, salt, bring it to a boil and let the raw smell disappear.
6. Add the mashed eggplant, mix well and switch off when it comes to the desired consistancy.
PS:
1. This recipe does not include onions/garlic. Add them if you prefer.
2. Can also be served with plain rice.
