Pav Bhaji (Pao Bhaji/Pau Bhaji) is a fast food dish native to Maharashtra and is popular all over the cities in India. This is my fav chat item and used grab these when I need something filling in a jiffy. My North Indian friend, V has especially made it for us. Thanks V for the recipe.
Ingredients:
Potato (Cooked & mashed) - 2 cups
Onion (finely chopped) - 1 cup
Tomato (chopped) - 3/4 cup
Chilli powder - 1/2 tsp
Pav bhaji masala - 2 tsp
Ginger garlic paste - 1 tsp
Coriander leaves - few
Pav (or Hamburger buns) - 6
Butter - 2 tbsp
Salt - to taste
Lemon juice - 1 tsp
Method:
1. In a pan, heat butter, add onions and saute for a while.
2. Add ginger garlic paste, tomatoes and saute for few mins.
3. Add potato, chilli powder, pav bhaji masala, salt.
4. Garnish with coriander leaves.
5. In another pan, heat butter and add pav which is slit into half and toast on both sides.
6. Serve bhaji topped with onion pieces, lemon juice.
PS:
1. You can also add veggies like cauliflower, capsicum in the bhaji.
2. We used normal bread since ran out of pav buns.

pav Bhaji looks tasty Ramya .. I love them too. Iam glad you liked the cookies, Brown sugar is nohing but white sugar with added molasses, you can even try baking them without using brown sugar but I guess it wont taste the same cuz brown sugar adds a different flavour to the cookies
