Badam Kheer

Badam Kheer is a delicious sweet served as sweet or dessert. It has all the goodness of almonds, milk, flavor of saffron and cardamom. It's taken after dinner party or spicy meal.

Ingredients:
Almonds - 30
Cashews - 10
Milk - 1 litre
Cardamom - 3
Saffron - 10 strands
Raw rice (soaked for half an hr) - 1 tsp
Grated coconut (without brown skin) - 1 tsp
Sugar - as required

Method:
1. Blanch almond by soaking in hot water and peeling the skin after half an hr.
2. Grind blanched almonds, cashews, cardamom, saffron, raw rice, grated coconut with little milk to a paste.
3. Pour the paste into a pan along with 1/2 litre milk.
4. Let it boil till the raw smell goes away. Stir occasionally.
5. After raw smell goes away remove from the flame and add another 1/2 litre milk and sugar.
6. Can be served hot or cold.
