Vegetable Fried Rice

Ingredients:
Cabbage - 1/4 cup
Carrots - 1/4 cup
Bell pepper - 1/4 cup
Ginger garlic - 3 tsp
Black pepper powder - 2 tsp
Salt - to taste
Soy sauce (light) - 2 tsp (optional)
Spring onions - 1/4 cup
Cooked Basmati Rice - 2 cups
Oil - 5 tsp

Method:
1. Heat the pan on high flame and add oil add all the veggies (except spring onions).
2. Stir fry them with a pinch of salt, later add the cooked rice to it, salt, pepper and soy sauce.
3. Mix well and keep stir frying for couple of minutes.
4. Switch off garnish with the spring onions and serve.
PS:
1. The whole mixing has to be done on high flame, so get all the ingredients ready before starting.
2. Rice needs to be cold, warm or hot rice would spoil the dish. A day old basmati rice works well.
3. Can serve with Tomato Sauce.
